ENCHILADA PASTA SALAD

Ingredients

• 4 oz chicken (any kind)

• 1/2 cup cooked pasta I like Barilla protein pasta

1-2 TBS: • black beans • corn • red onion • tomato • jalapeño or poblano pepper (optional)

• Dressing: 3 TBS enchilada sauce, 1

TBS plain Greek yogurt, 1 tsp taco seasoning, lime juice

• Optional tortilla strips for topping

Directions

1. Cook pasta according to package directions, and add to a bowl (or tupperware container if meal prepping)

2. Prepare chicken of choice, I like to season 2 chicken tenderloins for this, then air fry 400F for 5 min, each side. Let rest a couple minutes on cutting board, then slice.

3. Dice and add veggies

4. Mix dressing ingredients together then toss everything together until evenly combined, add tortilla strips on top for crunch if preferred!
