Baked Stuffed Catfish

Ingredients

catfish (3½ to 4 pounds)

1 cup soft bread crumbs

½ teaspoon salt

½ teaspoon pepper

1 teaspoon each minced onion and parsley

1 teaspoon pickle relish

1 egE, beaten

¼ cup butter of margarine, melted

Flour

6 strips salt pork

1½ Cups fish stock or water

Directions

Wipe fish with damp paper towel. Mix next 7 ingredients, and stult fish with the mixture, Use sewers to close the cavity or tie fish with string. Rub all over with melted butter. Roll in Bour. Make S-shape slits in cach side of fish and slip a pork strip into each.

Bake in pre- heated moderate oves (350°F.) 40 to 60 minutes, basting frequently with the stock.
