@nyt Cooking Three-cup Chicken

Ingredients

Here’s a base recipe you can play around with that makes 2 servings:

2 tbsp sesame oil, divided

1 small knob of ginger, peeled with the back of a spoon and sliced

6 cloves of garlic, peeled and crushed or sliced in half

2 scallions (green onions), roughly chopped

3 dried chilis of choice for mild spice, or leave out for no spice

1lb dark meat chicken of choice, cut into bite-sized pieces

1 tbsp brown or coconut sugar

1/3 cup rice wine

3 tbsp soy sauce

1 cup loosely packed fresh basil leaves

Directions

Start by frying the aromatics in 2/3 of the sesame oil over high heat in a wok or large frying pan. After 1-2 minutes, add in the chicken, cooking until starting to brown. Sprinkle in sugar followed by rice wine and soy sauce. Stir and simmer until sauce is as glazy or saucy as you’d like. Serve over rice, noodles, or whatever you’d like!
