Ingredients
1 (5 oz) can chicken breast in water, drained (about 4 oz drained)
2 tbsp plain nonfat Greek yogurt
1 tbsp light mayonnaise
2 tsp lime juice
¼ tsp chili powder
¼ tsp cumin
Pinch garlic powder
Pinch smoked paprika
Salt and black pepper, to taste
2 tbsp corn (fresh, canned, or thawed frozen)
2 tbsp black beans, rinsed and drained
2 tbsp diced red bell pepper
2 tbsp diced red onion
1 tbsp chopped green onions
1 tbsp chopped fresh cilantro (optional)
1 tsp diced pickled jalapeño (optional)
Directions
Instructions
Drain the chicken well and break it apart with a fork.
In a bowl, mix together the Greek yogurt, light mayo, lime juice, and seasonings.
Fold in the chicken, corn, black beans, peppers, onion, and cilantro.
Taste and adjust seasoning with more lime, salt, or chili powder if desired.
Chill for 15–30 minutes if you have time—the flavors improve.
