For the Chicken
4 bone-in, skin-on chicken thighs
1 tbsp olive oil
Salt and black pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
For the Gravy
1 tbsp butter
1 tbsp all-purpose flour
¾ cup chicken broth
1 tsp Dijon mustard
For the Mashed Potatoes
3 medium potatoes, peeled and cubed
2 tbsp butter
¼ cup milk or cream
Salt, to taste
For the Glazed Carrots
7 oz (200 g) baby carrots
1 tsp butter
1 tsp honey
Salt and black pepper, to taste
To Garnish
Fresh parsley, chopped
Directions
Bring a pot of salted water to a boil. Add the potatoes and cook for 12–15 minutes until fork-tender. Drain well, then mash with butter, milk, and salt until smooth. Cover and keep warm.
Preheat the oven to 400°F (200°C). Season the chicken thighs with salt, pepper, garlic powder, onion powder, and dried thyme.
Heat olive oil in a large ovenproof skillet over medium-high heat. Place the chicken skin-side down and sear for 5–6 minutes until the skin is golden and crisp. Flip and cook for another 3 minutes.
Transfer the skillet to the oven and roast for 20–25 minutes, until the chicken reaches an internal temperature of 165°F. Remove the chicken and set aside to rest.
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Slowly pour in the chicken broth while whisking, then stir in the Dijon mustard. Simmer for 3–4 minutes until the gravy thickens.
Meanwhile, boil or steam the carrots for 8–10 minutes until tender. Drain, then sauté with butter and honey for 2–3 minutes. Season with salt and pepper.
Serve the chicken over creamy mashed potatoes with glazed carrots on the side. Spoon warm gravy over the chicken and finish with a sprinkle of fresh parsley.
Notes & Variations 📝
Chicken breasts can be used instead of thighs; reduce roasting time slightly
Add rosemary or oregano for extra herb flavor
Swap carrots for green beans or broccoli if desired
For a lighter mash, use milk instead of cream
