Kitchri- Iraqi Rice and Lentils

Ingredients

2 cups of basmati rice

3/4 cup of red lentils

1 tablespoon of extra virgin olive oil

4 cups of boiling water

1 ½ teaspoons of kosher salt

Ingredients for the cumin garlic:

1/3 cup of extra virgin olive oil

1 small onion or shallot, thinly sliced

4 minced garlic cloves

1 teaspoon cumin

Directions

Rinse the rice and the lentil and drain.

In a pot put the olive oil, add the drained rice and lentil and salt.

On medium heat, mix the rice for 30 seconds.

Pour the boiling water and bring it to a boil.

Cover and reduce the heat to low heat. Cook it for 20 minutes.

In the meantime, ,in a pan add the olive oil, sliced onion, minced garlic and cumin.

Stir and fry on low heat for 4 minutes until it gets a nice golden color.

When the rice is ready, mix it gently and pour the cumin-garlic on top of the rice. M,ix it all gently.

You can serve it with fresh tomato salad and yogurt.
