Ingredients

Ingredients (serves 2):

5 tomatoes

1/2 chopped red onion

3 crushed garlic cloves

10ml olive oil

Salt

Pepper

Fresh basil

80g grated mozzarella

100g natural yogurt

100g uncooked penne

150g cooked chicken thigh

Directions

Add olive oil, tomatoes, red onion & garlic to a large frying pan. Place lid on and fry on low for 8-10 mins

Meanwhile, add the penne to a saucepan of boiling water and simmer for 8-10 mins until tender, then drain

With tongs, remove the skin from the tomatoes - it should easily peel off

Mash the tomatoes up and mix with the red onion, garlic and basil

Add the mozzarella and stir for 2 mins until melted

Then add the yogurt and stir in the cooked penne and cooked chicken thigh. Cook gently for another 5 mins before serving.
