Angel Food Deluxe Cake

Ingredients

1 cup cake flour

1 1/2 cups powdered sugar

1 cup cake flour

1 1/2 cups powdered sugar

1 c sugar

1 1/2 tsp vanilla

1/2 tsp almond flavoring

Directions

Sift together 3 times:

1 cup cake flour

1 1/2 cups powdered sugar

Beat until foamy:

1 1/2 cups egg whites

1 1/2 tsp. cream of tartar

1/4 tsp. salt.

Gradually add 1 cup sugar, 2 T. at a time. Continue beating until meringue holds stiff peaks.

Fold in:

1 1/2 tsp. vanilla

1/2 tsp. almond flavoring

Stir flour mixture gradually over the meringue.

Bake at 375 for 30 - 35 minutes.

I made lots of these cakes when my family was young. We had chickens and always had lots of eggs.
