Quick Brekkie Quiche
1 Low Carb Wrap
3 Eggs
100g Low Fat Cottage Cheese
½ cup Spinach
1/3 cup tomatoes
1/8 cup spring onion
20 g Light shredded cheese
Optional – Cheese & Everything bagel seasoning

Directions
Place a wrap in a round oven dish, then crack in eggs and add cottage cheese. Mix well, seasoning with salt and pepper to taste. Top with half a cup of fresh spinach, cherry tomatoes, and chopped spring onion. Sprinkle cheese over the top and add Everything bagel seasoning if desired. Bake at 180°C for 15-20 minutes or until eggs are fully cooked.
