Arugula Lemon Salad Dressing

- 3 tbsp extra virgin olive oil - 1 tbsp red wine vinegar (or white wine vinegar) - 1 small garlic clove, minced - Juice of 1/2 lemon - Salt and freshly ground black pepper, to taste - Optional: pinch of crushed red pepper flakes
Directions
1. In a small bowl, whisk together garlic, vinegar, and lemon juice.
2. Slowly drizzle in olive oil while whisking to combine.
3. Season with salt, pepper, and optional red pepper flakes.
4. Toss with fresh arugula right before serving.
