Ingredients

3/4 cup packed brown sugar

2 eggs

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/8 teaspoon salt

1/3 cup oil

8 oz (1 1/4 cup) dairy-free, semi-sweet chocolate chips

1/3 cup cornstarch

Directions

Preheat oven to 350 degrees farenheit

Line an 8x8 inch baking dish with parchment paper or grease and flour (I just generously grease).

In a medium mixing bowl, add the sugar, eggs, maple syrup, vanilla and salt. Beat with a hand mixer to combine. set aside.

Put the chocolate chips and oil together in a microwave safe bowl. Microwave on high for 30 seconds and whisk VIGOROUSLY. Microwave for 30 seconds more and vigorously whisk again. if it isn't completely melted, continue to microwave in 15 second intervals and whisk vigorously in between until the chocolate is just melted. if you overheat it, it will scorch and seize up.

Scrape the melted chocolate mixture into the mixing bowl with the other ingredients. use an electric mixer to combine.

Sift in the cornstarch. Sifting is very important or there will be weird clumps. Beat the batter with the electric mixer for at least 1 minute (this part is essential!). The batter will be quite thick.

Pour the batter into your prepared pan and bake for 30 to 35 minutes or until set in the center. A toothpick inserted into the brownies should come out relatively clean with just a few crumbs clinging.

Let the brownies cool completely before cutting and serving, otherwise they will be crumbly. We store the brownies in the refrigerator.
