Blueberry Protein Pancake Bowls

These high protein pancake bowls are great for breakfast meal prep and taste just like cake!! 🤩 37g of protein per protein pancake bowl, and can be reheated in the microwave after cooking, making it great for busy mornings!
Macros per bowl: 378 cals, 37g P, 42g C, 7g F
Ingredients (per bowl):
1 large egg
50g 0% fat greek yogurt
60ml semi skimmed milk
Sweetener (optional, I used 4-5 drops of vanilla MyProtein flavdrops)
35g all purpose flour
25g @myprotein vanilla impact whey isolate protein powder
½ baking powder
50g fresh blueberries
Drizzle of honey or maple syrup
Directions
Preheat the oven to 180C
Add the wet ingredients to an oven safe bowl & whisk till smooth
Fold in the dry ingredients till almost combined
Carefully fold in the blueberries & place a few on top
Oven bake for approx. 30 mins (time may vary depending on your dish size, I used a 0.7l glass bowl) so adjust time as needed. TIP: you know it’s cooked when a toothpick or knife comes out mostly clean
Once cooked, let it fully cool before storing in the fridge with an airtight lid for 3-4 days! Then when ready to eat, microwave to reheat, drizzle with honey or maple syrup & enjoy!
Meal Prep Tip: you can use the same fruit or different in each bowl to mix up the flavours! ✨
