Ingredients

6 eggs (soft-boiled, 6 minutes)

100ml soy sauce

100ml water

100ml rice syrup (or honey)

100ml mirin

2 cloves garlic (sliced)

1 small piece of ginger (sliced)

1 red chili (sliced)

1 tsp sesame oil

1 tbsp sesame seeds

Cooked rice (optional, for serving)

Directions

Bring a pot of water to a boil. Carefully add the eggs and cook for 6 minutes. Immediately transfer them to an ice bath to stop the cooking. Once cooled, peel the eggs gently and set them aside.

In a bowl or container, combine soy sauce, water, rice syrup, mirin, sliced garlic, ginger, chili, sesame oil, and sesame seeds. Mix well to create the marinade.

Place the peeled eggs into the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 6 hours or overnight for the best flavor.

To serve, enjoy the marinated eggs as a snack, or slice them in half and serve over warm rice with some of the marinade drizzled on top.
