Pecan Pie Cottage Cheese Breakfast Bites – High-protein, Nat

Ingredients

All the cozy, nutty flavors of pecan pie—packed into healthy, protein-rich mini bites you can enjoy for breakfast, snacks, or dessert. These are gluten-free, refined sugar-free, and made with cottage cheese for extra creaminess!

Ingredients (makes 8–10 bites):

½ cup cottage cheese

2 large eggs

2 tbsp maple syrup or honey (or sugar-free syrup for lower carbs)

1 tsp vanilla extract

½ cup almond flour

2 tbsp oat flour (or more almond flour for low-carb)

½ tsp cinnamon

¼ tsp nutmeg (optional)

½ tsp baking powder

Pinch of salt

⅓ cup chopped pecans (plus extra for topping)

Directions

Preheat Oven → Set oven to 350°F (175°C). Line a mini muffin tin with liners or lightly grease.

Blend Wet Mix → In a blender or bowl, mix cottage cheese, eggs, maple syrup, and vanilla until smooth.

Stir in Dry Ingredients → Add almond flour, oat flour, cinnamon, nutmeg, baking powder, and salt. Mix until combined.

Add Pecans → Fold in chopped pecans.

Bake → Spoon batter into mini muffin cups, filling about ¾ full. Top with extra pecan pieces if desired. Bake 14–17 minutes, until golden and set.

Cool & Enjoy → Let cool slightly, then enjoy warm or store in the fridge up to 5 days (freezer-friendly too!).

Tips & Variations:

For a caramel-like touch, drizzle with sugar-free caramel syrup.

Add 1 scoop vanilla protein powder for an extra boost.

Swap pecans for walnuts if preferred.
