Spinach and Sausage Stuffed Peppers

Ingredients

1/2 cup cooked white rice

4 Large sweet bell peppers

1/2 lb. of bag chopped baby spinach

1/4 lb. of grated cheese

1/2 lb. of Chorizo (or Italian, or Andouille) sausage crumbles

Directions

1. While pre-cooking the rice, core the peppers and clean out the seeds.

2. Create a bed of rice in the bottom of each pepper to absorb anything that cooks out of the stuffing.

3. In a bowl mix the remaining ingredients.

4. Fill the pepper the rest of the way up with the cheese/sausage/spinach mix, packing it down tightly.

5. Bake for 1-1/2 hours or an internal temperature of 160F (if starting with uncooked sausage) in an oven preheated to 350F.

Notes

Use the yellow orange or red bell peppers.
