Spicy Gochujang Cauliflower Tacos

1 large cauliflower
2 tbsp olive oil
2 tbsp gochujang paste (or any paste you like)
2 tbsp Frank’s hot sauce
3 tbsp Greek yoghurt
2 garlic cloves
1 tsp salt
1 tbsp maple syrup
100 ml water (add more if needed)
To serve
Tacos
Guacamole
Lime wedges
Red chilli & jalapeños (optional)
Directions
Chop the cauliflower into small florets and add to a large bowl.
Add all remaining ingredients to a blender and blend until smooth.
Pour the sauce over the cauliflower and mix well until evenly coated.
Spread onto a lined baking tray and bake at 200°C for 45 minutes, or air fry for 35–40 minutes, until crispy and caramelised.
Fill tacos with guacamole and roasted cauliflower.
Top with chilli, jalapeños and a squeeze of lime.
