Ingredients

Oat Shortbread Layer:

1 ½ cup oat flour (rolled oats blended into a flour)

1/2 cup almond flour

3 tbsp melted coconut oil

2 tbsp maple syrup

Pinch of salt

Caramel Layer:

1/2 cup almond butter (or any nut butter)

3 tbsp coconut oil, melted

1/4 cup maple syrup

1/2 tsp vanilla extract

Pinch of salt

Chocolate Layer:

1/2 cup chocolate chips

1 tsp coconut oil

Directions

Mix oat flour, almond flour, melted coconut oil, maple syrup, and salt until a dough forms.

Press dough into the pan and place in fridge to thicken

Mix almond butter, coconut oil, maple syrup, vanilla, and salt together

Pour caramel over the shortbread and smooth with a spatula.

Freeze for 20 minutes until firm.

Melt chocolate chips and coconut oil in 30-second intervals.

Pour the chocolate on top and place back in the freezer to harden.

Remove, cut into bite size pieces, and enjoy!
