Almond Joy Energy Balls

Ingredients

3/4 cup Unsweetened Desiccated Coconut (note 1)

1 cup Almond Flour (note 2)

2 tablespoons Coconut Milk (note 3)

1/3 cup Maple Syrup (note 4)

1/4 teaspoon Coconut Extract

2 tablespoons Unsweetened Desiccated Coconut

9 Roasted Almonds

1/3 cup Dark Chocolate Chips (melted)

Directions

In a mixing bowl, add coconut, almond flour, maple syrup, coconut milk, and coconut extract, if used.

Stir with a rubber spatula at first, then lightly oil your hands and squeeze the dough to bring everything nicely together. If too dry, add a bit more milk. If too wet, add a bit more almond flour. You should be able to roll a ball from the dough. The dough is soft, wet, but roll well in lightly oiled hands.

Lightly oil hands and roll about 1 1/2 tablespoons of dough. Repeat until no more dough is left - I made 9 energy balls in total.

Place the extra 2 tablespoons of unsweetened desiccated coconut in a small bowl, place the rolled energy balls, and roll to coat with coconut.

Press a whole roasted almond on the top of each ball. They will flatten a bit, so re-roll them between your hands to encase the almond and reshape into a perfect round shape.

Melt the chocolate chips in a microwave-safe bowl in 30-second bursts, and drizzle them on top of the balls.

Place the balls in the freezer for 10 minutes to set the chocolate.

Place the energy bites in an airtight container and refrigerate for up to 5 days.
