Chicken Barley Soup

Ingredients

  • 1 14 ½ oz can Diced Tomatoes

  • 1 16 oz. Jar Salsa

  • 2 cups Chicken Broth

  • 1 cup Quaker Quick Barley

  • 3 cups Water

  • ½ Tablespoon Chili Powder

  • ½ teaspoon Cumin

  • 1 can Black Beans (rinsed and drained)

  • 1 can Corn (undrained)

  • 2 cups Cooked Chicken

Directions

Stovetop Directions

Add to a large, heavy bottomed pan the following ingredients: Diced Tomatoes, Salsa, Chicken Broth, Quick Barley, Water, Chili Powder, Cumin.

Heat on high. Bring to boil. Cover and simmer for 30 minutes, stirring occasionally.

Add Black Beans, Corn, and Chicken.

Bring to boil again, then reduce heat for 5 minutes.

Add more water or broth, if needed.

Top with Shredded Cheese, Sour Cream, Cilantro and/or Tortilla Chips if desired.
