Shaved Carrot Salad W/ Almond Butter Dressing

Ingredients

3-4 medium carrots

1/4 cup creamy almond butter or peanut butter

2 tablespoons soy sauce

2 tablespoon sesame oil

1/4 teaspoon pepper

3 tablespoons rice vinegar or apple cider vinegar

2 tablespoons maple syrup or honey

1 tablespoon garlic finely minced

1/3 cup water

1️⃣ wash and clean your carrots well. Slice your carrots in julienne strips or use a julienne peeler. Place the carrots in a bowl of ice water.

Directions

In a large bowl, add the almond or peanut butter, garlic, black pepper, rice vinegar, maple syrup and soy sauce. Whisk until well

combined. Slowly add in water until your desired consistency is reached.

Strain the carrots and pat dry. Toss the carrots in the nut dressing and mix until well combined. Serve and Devour!
