Butter Chicken [Swithin]

Ingredients

Diced onion - 1 CUP

Garlic paste - 1 TSP

Ginger paste - 1 TSP

Tomatoes - 3 medium or half can of San Marzano

Kashmiri powder - 1 TSP

Cashews - 50 G

Sugar - 2 TSP

Butter - 2 TBSP

Garam Masala - ½ TSP

Cream - ¼ cup

Kasuri Methi (dried fenugreek) - ½ tsp

Boneless Chicken - 500 G

Yogurt - 2 TBSP

Garlic paste - ½ TSP

Ginger paste - ½ TSP

Kashmiri powder - 1 TSP

Lime Juice - 1 TSP

Ghee - 1 TBSP

Directions

Take the chicken and add salt to taste, yogurt, garlic paste, ginger paste, Kashmiri powder, lime juice and ghee. Marinate for at least 30 mins

Griddle the chicken or cook in oven and then broil at 400 for some time to get char

In a pan put some ghee and sauté onions with salt.Sauté till transparent with barely brown edges and add garlic and ginger paste. After cooking for a minute add the tomatoes and cook for a bit with Kashmiri chili. Add water, if using fresh tomatoes. No need to add water if you are using tinned tomatoes.

Add cashews and cook for 15 mins. Add sugar and salt.

Blend all the above and return to dish

Add garam masala and cream. Cook for a few minutes

Add chicken and kasuri methi. Garnish with some butter
