Ingredients

2 pounds leaner ground pork

12 guajillo chiles

2 ancho chiles

5 garlic cloves

1/2 teaspoon black peppercorns

1/4 cinnamon stick

2 bay leaves

1/4 teaspoon whole cumin

1/4 teaspoon oregano

1 clove

1/4 teaspoon coriander seeds

18 grams coarse salt

1 teaspoon paprika

4 chiles de arbol

1/2 cup apple cider vinegar

1 1/2 cups water

How to make it

Directions

Start by rehydrating 12 guajillo chiles and 2 ancho chiles

Transfer them to a blender and add 5 garlic cloves, 1/2 teaspoon black peppercorns, ¼ cinnamon stick, 2 bay leaves, 1/4 teaspoon whole cumin, 1/4 teaspoon oregano, 1 clove, ¼ teaspoon coriander seeds, 18 grams coarse salt, 1 teaspoon paprika, 4 chiles de arbol, 1/2 cup apple cider vinegar, and 1 1/2 cups water

Blend until smooth and mix into 2 pounds of leaner ground pork

Transfer to a gallon size bag and refrigerate overnight to marinate

The next day cook it up and use it however you like. I went with the classic chorizo and eggs Cook ground pork to an internal temperature of 160°F
