Smashed Roasted Zucchini over Lemon & Dill Whipped Feta

For the zucchini:
3 medium zucchini
2 tablespoons olive oil
Salt and pepper to taste
1/2 tsp dried oregano
2 tablespoons grated parmesan
For the whipped feta:
8 oz feta cheese
5 oz plain greek yogurt
2 tbsp freshly squeezed lemon juice
1 tsp lemon zest
1 tbsp olive oil
1/4 tsp salt & pepper
2 cloves garlic
2 tbsp fresh dill

Step 1
Preheat the oven to broil and place a rack in the middle-top section of your oven (not right under the broiler, but a bit above the middle).
Step 2
Using a rolling pin, smash the zucchini (pretty hard!) about 4-5 times, until it splits down the middle and in a few other places. Use your hands to pull the zucchini apart where it naturally tears, breaking it up into pieces that are roughly 2 inches long. It's okay to have some smaller and some larger pieces.
Step 3
Toss the zucchini in the olive oil, salt, pepper, oregano and parmesan until well coated. It's easiest to use your hands. Transfer the zucchini to a nonstick sheet pan.
Step 4
Broil for 10-14 minutes. This can vary widely depending on your oven. Ours took closer to 14 minutes, but we started checking it around 8 minutes. They're done when they're just on the verge of looking burnt. Keep a close eye on them! Remove from the oven and let cool on the sheet pan.
Step 5
While the zucchini is roasting, add all of the whipped feta ingredients to a food processor and blend until completely smooth.
Step 6
Spread the feta on a platter and top with zucchini. Garnish with a drizzle of honey, chopped pistachios, more fresh dill and (optional) lemon zest.
