High Protein Street Corn Chicken Bowl

Ingredients

For the chicken:

1 ½ chicken

1 tsp Garlic powder

1 tsp chili powder

1 tsp paprika

1/4 tsp cumin

salt & pepper to taste

Olive oil

Street Corn Salsa:

1 can corn

1/4 cup Greek yogurt

1/4 cup cotija cheese

1 lime juiced

1 Jalapeño

cilantro

1 avocado

Tajin to taste

Directions

1.Cube & season chicken and cook on medium heat until cooked through (about 3-4 mins per side)

2.Make the salsa by cubing the avocado & mixing everything together.

3.Serve chicken over rice, top with street corn salsa and a little more cilantro and tajin!
