Banana Chocolate Cake With Chocolate Fudge Icing

Banana Chocolate Cake

250g ripe bananas, mashed

100g melted unsalted butter - melt 110g in a small saucepan, some water weight will evaporate.

1 medium egg

50g sugar

1 tsp vanilla

Big pinch of salt

120g plain flour

50g cocoa powder

30g dark chocolate, chopped into very small chunks

Grease and line a 900g loaf tin. Preheat the oven to 170 fan. Whisk together the banana, butter, egg, sugar, vanilla and salt. Then mix in the rest of the ingredients to form a batter. Pour into the tin and bake for 30-35 minutes.

Chocolate Fudge Icing

70g dark chocolate, chopped

30g unsalted butter

5g golden syrup - seems a pointless amount but it is key!

50g icing sugar, sifted - (yes, please sift the icing sugar, we need no lumps)

Directions

Melt the chocolate, butter and golden syrup over a bain-marie. When melted, take off the heat and gradually mix in the icing sugar - if you tip it all in at once, this icing can go grainy, not a disaster, but not ideal. Taste the icing, season with salt if you want. Allow the icing to cool and thicken slightly before pouring over the cake.
