Chocolate Fluff Cookies (ATK)

Ingredients

12 Carr's Wheatmeal Biscuits

1 1/2 cups Marshmallow Fluff

8 ounces bittersweet chocolate, finely chopped

2 tablespoons vegetable oil

Directions

1. Make cookies Place biscuits on wire rack set over rimmed baking sheet. Top each biscuit with 1 rounded heaping tablespoon Marshmallow Fluff. Place baking sheet in freezer until Fluff has firmed up, about 10 minutes.

2. Coat with chocolate Melt chocolate and oil in small saucepan and stir until smooth. Cool to room temperature. Spoon chocolate evenly over each cookie to coat Fluff completely. Return baking sheet to freezer until chocolate is set, about 10 minutes. Refrigerate for at least 1 hour or up to 2 days.

Notes

These cookies are inspired by Mallomars but taste much better. Freezing the Fluff-topped cookies before coating them with chocolate prevents the Fluff from losing its shape. We like Carr's biscuits in this recipe for their round shape, crisp texture, and gentle sweetness.
