Garlic Butter Salmon

3 pounds salmon fillets, whole or individual fillets
Salt and freshly ground black pepper
4 tablespoons unsalted butter, softened
1½ tablespoons fresh lemon juice
2 cloves garlic, minced
Chopped fresh parsley or chives for serving
Directions
1. Preheat the oven to 400°F. Coat a shallow baking dish with cooking
spray or brush with olive oil.
2. Pat the salmon fillets dry, and transfer them to the prepared pan. Season the salmon with salt and black pepper.
3. In a small bowl, combine the butter, lemon juice, and garlic. Mix until blended. Spread the mixture all over the salmon fillets.
4. Roast for 10 to 15 minutes, until the salmon is fork tender (a meat thermometer should register 145°F). S. Reserve half of the salmon for the Teriyaki Salmon Ramen Noodles (page 146) or another future meal. Refrigerate for up to 3 days.
6. Top the remaining salmon with fresh parsley or chives, and serve.
Notes
SERVING SUGGESTION: For a complete and filling meal, serve the salmon with your favorite raw or steamed vegetable and a starchy side, such as rice, beans, pasta, potatoes, sweet potatoes, quinoa, couscous, or whole grain bread. For more
