The Most Delicious Leek Recipe : Charred and Braised Leeks

4 large leeks (white and light green parts)
1 tbsp olive oil
25g butter
500ml chicken stock (chicken bouillon) - I used @knorr Chicken Stock Cube with no added salt
Sea salt and freshly ground black pepper to season
Optional toppings: Burrata, sundried tomato pesto, mixed seeds, microgreens
Directions
Slice the leeks in half lengthwise, rinse them thoroughly, and pat them dry. Heat olive oil and butter in a large pan over medium-high heat, char the leeks on both sides until golden-brown, then pour in chicken stock and season with salt and pepper. Cover and braise for 10 minutes, then cook uncovered for another 10 minutes to reduce the liquid.
