Shrimp Linguine

Ingredients

1/4 lb. linguine

1 tbsp. vegetable oil

1 large clove garlic, minced

2 tbsp. shallots, finely chopped

2 large tomatoes, coarsely chopped

1/4 tsp. dried basil

1/4 lb. small shrimp, cooked

2 green onions, chopped

Salt & pepper to taste

Directions

In a large pot of boiling water; cook linguine until tender but firm; drain.

In tsp heavy skillet, heat oil over high heat.

Add garlic and shallots; cook, stirring for about 30 seconds.

Add tomatoes and basil; cook stirring, for about 1 minute.

Add shrimp and cook until shrimp are hot.

Sprinkle with green onions and season with salt and pepper

Spoon over hot linguine.
