Tuscan White Bean Soup

8 Small to medium-sized tomatoes
½ Red Onion
½ White Onion
3 Cloves Garlic
Splash of white wine
1 ½ Cups Parmesan Cheese
3 TBS Olive Oil
2 TBS Red pepper
3 Cups White Beans
Directions
Dice the onions (large chop) and cook down in 1 TBD of olive oil until soft - about 5-10 mins on med heat. Add the garlic and a splash of white wine and cook down for another 5 minutes. Add the tomatoes and cook everything together on a medium/low heat for 15 minutes. Remove half the mixture and blend until smooth, then add it back together. At a healthy amount of Parmesan cheese. Mix in the chopped kale and ad sea salt and fresh cracked pepper to taste. Toast your bread with a little Oil and dig in!!!
