Japanese Restaurant-Style Ginger Dressing (For Garden Salad)

Ingredients: • 1 cup carrots, roughly chopped • 1/2 cup onion, roughly chopped • 3 Tbsp fresh ginger, grated • 1/2 cup rice vinegar • 1/3 cup neutral oil (canola, vegetable, or avocado oil) • 2 Tbsp soy sauce (or tamari) • 2 Tbsp sugar or honey
Directions
Instructions:
1. Blend: Add all ingredients into a blender.
2. Puree: Blend on high for 1-2 minutes until completely smooth.
