Cheesy Baked Fajita Chicken

4 boneless, skinless chicken breasts: The main protein, juicy and tender when baked.

1 packet fajita seasoning: Provides the perfect blend of spices for a bold, smoky flavor.

2 tablespoons olive oil: Helps seasonings stick to the chicken and veggies while adding moisture.

1 red bell pepper, sliced: Adds a sweet, colorful flair.

1 green bell pepper, sliced: Complements the red pepper with a slightly earthy taste.

1 onion, sliced: Adds a savory and slightly sweet flavor.

1 cup shredded Mexican cheese blend: Melts beautifully for a rich, cheesy topping.

Directions

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9x13-inch baking dish or line it with parchment paper for easy cleanup.

2. Season the Chicken

Place the chicken breasts in the baking dish.

Drizzle with olive oil and sprinkle the fajita seasoning evenly over the chicken, ensuring all sides are well coated.

3. Prepare the Veggies

In a medium bowl, toss the sliced red and green bell peppers and onion with a drizzle of olive oil and a sprinkle of the fajita seasoning (optional).

Spread the seasoned veggies evenly around and on top of the chicken breasts.

4. Bake

Cover the baking dish with aluminum foil and bake for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

5. Add the Cheese

Remove the foil and sprinkle the shredded Mexican cheese blend evenly over the chicken and veggies.

Return to the oven and bake uncovered for another 5–7 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve

Remove the dish from the oven and let it rest for 5 minutes.

Garnish with a squeeze of lime juice, fresh cilantro, or your favorite toppings.

Serve as-is, or pair with rice, tortillas, or a fresh green salad.
