Ground Beef Tacos

1 Tablespoon avocado oil
1 pound lean ground beef
1 medium green bell pepper (finely diced)
1 cup beef broth (or stock)
8 small corn or whole wheat tortillas
2 cups shredded lettuce
1/2 cup diced onion
1/2 cup diced tomato
1/2 cup shredded cheddar cheese
1 medium lime (cut into 4 wedges)
Ground Beef Seasoning
1 Tablespoon masa flour
1 teaspoon chili powder
1 teaspoon garlic powder
2 teaspoons paprika
1 teaspoon cumin
1 teaspoon dried minced onion
1 teaspoon salt
1/2 teaspoon sugar (optional)
Directions
In a small bowl, combine the seasoning ingredients and whisk well. Set the seasoning mix aside.
Heat a large skillet over medium-high heat and add the oil.
Add the ground beef and green bell pepper to the skillet breaking it up as it cooks.
Once the ground beef is cooked and browned, sprinkle over the entire seasoning mixture and stir it into the ground beef and green pepper.
Add the beef broth to the meat and stir well again.
Reduce the heat to medium-low and allow the beef to simmer, stirring occasionally, until the liquid is absorbed.
Warm the tortillas in a dry, hot skillet for a few seconds on each side and then fill with ground beef, lettuce, tomato, onions, and a squeeze of lime.
Add additional toppings as you wish, serve, and enjoy!
