Caramelized Catfish

4 catfish filets
Garlic powder
2 TBSP sugar
2 TBSP oil
1 can coco rico (12 oz)
3 TBSP fish sauce
Dark soy sauce (optional)
Directions
Wash catfish in some water and salt. Then rinse off the salt water and pat dry
Season catfish with garlic powder
on a skillet, heat up some sugar + oil. Cook this on medium low heat until it turns into am amber color… make sure to stir occasionally
once your sugar and oil mixture turns into an amber color, add your catfish filets. cook for ~1 minute then flip and cook for another ~1 minute.
Then pour in 1 can coco rico (12 oz), 3 TBSP fish sauce and a drizzle of dark soy sauce. Bring this to a boil and then reduce heat and simmer for 10-15 minutes. Don’t forget to baste every so often during the 10-15 minutes
After 10-15 minutes of cooking, carefully flip your filets over 1 more time. Taste test to see if you need to adjust anything
If everything taste good, then crank heat to high and cook for 5 minutes. Your sauce with reduce and thicken.
