Creamy Lemon Chicken & White Bean Soup
Ingredients (serves 4):
1 tbsp olive oil
1 small onion, diced
2 carrots, diced
2 cloves garlic, minced
3 cups cooked shredded chicken
2 (15 oz) cans white beans, drained & rinsed
4 cups low-sodium chicken broth
1 tsp dried oregano
Juice of 1 large lemon
½ tsp sea salt (adjust to taste)
Fresh cracked pepper
2 cups chopped spinach
¼ cup plain Greek yogurt (stirred in at end for creaminess)
Directions
In a large pot, heat olive oil over medium. Sauté onion and carrots 4–5 minutes until softened. Add garlic and cook 30 seconds. Stir in chicken, beans, broth, oregano, salt, and pepper. Simmer 15–20 minutes. Add spinach and cook until wilted. Remove from heat and stir in lemon juice and Greek yogurt for a creamy finish.
