Zanes Healthy One-Pot Curry

Step 1
• 12 oz. steak, cut into 1/2-inch cubes
• 3 cloves of fresh garlic
• 1/2 tsp of dried basil (to help offset the acidity of the tomato)
• 1-1/2 cups of chopped yellow onion (Vitamin B6, K, Omega 3 and 6)
• Canola oil as needed
Step 2
• 1-1/2 cup tomato puree (or paste) (15 oz can)
• 1-1/2 cup canned pumpkin (15 oz can)
• 1-1/2 cup of sliced mushrooms (6 oz jar)
• 1 14 oz. can of coconut milk (to help offset the acidity of the tomato)
• 3 tbsp molasses
• 1-1/2 tbsp curry powder
• 3/4 tsp ground turmeric
• 1 tsp ground cumin
• 3/4 tsp salt or less/more to taste
• 1/2 tsp paprika
• 1/4 tsp black pepper or less/more to taste
• 1 tsp ginger
• 1/2 tsp baking soda (to help offset the acidity of the tomato)
Step 3
• 3 cups of baby spinach
Directions
1. Brown the meat in a wide 4 qt. saucepan with garlic, onion, basil and canola oil.
2. Add tomato, pumpkin, mushrooms, coconut milk, molasses, curry powder, turmeric, cumin, salt, paprika, black pepper, ginger, and baking soda. Simmer, covered, on low for 60-90 minutes, stirring frequently. This will help make the steak tender.
3. Add the spinach and let it simmer for 10 more minutes.
Serve over rice, or by itself in a bowl.
