Waldorf Salad

Ingredients

4 medium apples-about 4 cups diced

1 tablespoon lemon juice

1/2 cup chopped celery

1/2 cup chopped walnuts or pecans

1/4 cup raisins, rinsed in hot water

Dressing:

1/2 cup mayonnaise

1 tablespoon sugar

1/2 teaspoon lemon juice

1/2 cup whipping cream or country crock df dairy free whipping cream

Ground nutmeg

Directions

Core and dice apples to make about 4 cups. In a large bowl sprinkle cut up apples with 1 Tablespoon lemon juice. Add celery, nuts and raisins.

For dressing:

In a small bowl combine mayonnaise, sugar and lemon juice. Whip cream just until soft peaks form. Fold whipped cream into the mayonnaise mixture and spoon it over the apple mixture sealing the apple mixture underneath. Sprinkle lightly with nutmeg. Cover and chill.

To serve, fold the dressing into the apple mixture.
