Ingredients

Jam Layer

1 cup (140 g) fresh strawberries, stems removed

½ teaspoon chia seeds

¼ teaspoon vanilla extract natural sugar substitute to taste (optional)

Smoothie Base

1 serving vanilla protein powder

2 tablespoons (32 g) peanut butter

1 tablespoon (5 g) psyllium husk

1 cup (192 g) frozen yellow squash

½ cup (118 ml) unsweetened almond milk

Directions

Jam layer: Place fresh strawberries into a small pot with ¼ cup (60 ml) water and cook over high heat for about 5 minutes. Mash berries to release juices every few minutes until berries come to a boil. Simmer for 3 minutes. Add the chia seeds, vanilla, and optional sweetener to taste. Transfer strawberries to the fridge to thicken and cool.

Shortcut: Instead of using the stove, you can microwave strawberries until warm (don't add water) and then add the chia seeds, vanilla extract, and sweetener. Let the jam cool in the fridge.

For the smoothie base; blend all ingredients on high until smooth. Layer the smoothie base and jam filling to create PB&J layers.

Notes

The smoothie parfait is best if you kill the parfait in the fridge before eating it. It is also a great recipe to meal prep for making in advance. If you can make the jam in advance, so it has time to cool off before you make your smoothie. You can multiply the jam ingredients to make a big batch at once, and even use it for other meals throughout your week.
