Maple Cherry Granola

Ingredients

2 3/4 cups rolled oats

1 cup shelled pistachios

1/3 cup raw pumpkin seeds

1 cup unsweetened coconut chips

1 cup walnuts

1 tablespoon salt

1/3 cup coconut sugar

1/3 cup extra-virgin olive oil

1/3 cup maple syrup

3/4 cup dried cherries

Directions

Preheat oven to 300°F. Line a baking sheet with parchment paper.

In a large bowl, mix together oats, pistachios, pumpkin seeds, coconut chips, walnuts, and salt.

In a small saucepan, combine coconut sugar, olive oil, and maple syrup. Heat on medium, whisking occasionally until smooth and combined.

Pour liquid mixture over dry ingredients and mix well.

Spread evenly on baking sheet. Bake for about 40 minutes, until lightly golden.

Remove from oven and mix in dried cherries. Let cool before serving.
