Street Corn Pasta Salad

Ingredients

It’s creamy, tangy, a little smoky, and goes with literally everything.

RECIPE:

8 oz ditalini or elbow pasta

1 Tbsp butter

½ cup diced white onion

1 chipotle chili in adobo, chopped

3 cups corn (fresh or frozen)

⅓ cup mayo

½ cup sour cream or Mexican crema

2½ tsp Tajín

Juice of 1 small lime

½ cup milk

½ cup Cotija cheese

½ cup chopped fresh cilantro

Directions

Cook pasta in salted water. Rinse to cool.

Sauté onion, corn & chipotle in butter. Char it up! Cool it.

Mix sauce: mayo, crema, tajín, lime, milk.

Toss pasta + corn + sauce. Top with cotija & cilantro. Done!

Pro tip: Make pasta & corn ahead, mix sauce last minute for max freshness.
