Protein Fried Rice

4 cups cold or day-old rice
1/2 cup peas and carrots
5 Eggs
1 onion, small dice
Green onions, thinly sliced for garnish
Cooking oil

Rice Sauce-
4 tbsp soy sauce
4 tbsp Shao xing wine or mirin
4 tbsp oyster sauce
2 tbsp sugar
1 tbsp chicken boullion or msg also known as accent in seasoning aisle
1 tsp White Pepper
2 tsp Sesame oil

Protein-
1lb protein
2 tbsp cornstarch
2 tsp shaoxing wine or mirin
1/2 tsp kosher salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp white pepper
1 egg
Directions
In a bowl marinate, protein with ingredients listed. Mix well and set aside.
In a separate bowl combine sauce ingredients. Mix well and set aside.
Crack, five eggs into a bowl and whisk to prep for cooking.
In a large pan or wok, heat a little cooking oil and sauté protein until 80% cook through. Remove from the pan into a bowl.
Heat another 2-3 tbsp cooking oil on high heat. Sauté onions until translucent. Then scramble eggs until almost cooked through. About 1 minute.
Add in rice and using a spatula to break up any clumps. The peas and carrots and meat. Cook meat through
Add in the sauce, sesame oil and green onions. Garnish with extra green onions if desired. Mix well and serve.

To make white rice it’s 2c dry rice to 2 1/2 c water
