Copycat Applebee's Bourbon Street Chicken and Shrimp

Ingredients

2 tsp brown sugar

1½ tsp smoked paprika

1 tsp oregano

1 tsp salt

⅓ tsp pepper

½ tsp garlic powder

½ tsp onion powder

½ tsp chili powder

½ tsp cayenne pepper

1 pound boneless chicken breast

1 pound tail-on shrimp (, peeled and deveined )

3 tbsp canola or olive oil, divided

⅓ cup butter

3 cloves garlic (, minced )

¾ cup low-sodium chicken stock (or bone broth for extra protein)

sauteed mushrooms

caramelized onions

parsley (, finely chopped (optional) )

garlic mashed potatoes

lemon wedges

Directions

Make the Cajun Seasoning:

In a large shallow bowl, combine all the cajun seasoning ingredients.

Use tongs to toss the chicken and shrimp in the cajun seasoning, then drizzle them with 1 tablespoon of oil. Rub the remainder of the cajun seasoning evenly.

Use immediately or cover with plastic wrap and marinate in the fridge for up to 24 hours (the longer you let it marinate, the more flavorful it will be!)

Make Applebee's Bourbon Street Chicken:

In a large nonstick skillet or pan, heat 1 tablespoon oil and 1 tablespoon butter over medium-high heat.

Once hot, sear the chicken until golden brown (about 5-8 minutes) or until the internal temperature reaches 165°F using a meat thermometer.

Remove the bourbon street chicken from the pan and set aside on a plate.

Make Applebee's Bourbon Street Shrimp:

In the same nonstick skillet or pan, heat 1 tablespoon oil and 1 tablespoon butter over medium-high heat.

Once hot, cook the shrimp for about 2 minutes per side, or until charred and cooked through.

Remove the bourbon street shrimp from the pan and set aside on a plate.

Make the Garlic Butter Sauce:

Using the same skillet, reduce the heat to medium. Melt the remaining butter in the pan and sauté the garlic for 30-45 seconds, or until fragrant. Make sure to scrape any browned bits from the pan to avoid burning. Add in the chicken broth and let the mixture reduce for about 3 minutes, or until the mixture reaches a "sauce" consistency.

Turn off the heat, then drizzle the sauce over the chicken and shrimp.
