450 g (1 lb) boneless, skinless chicken breast (butterflied)
3 tbsp Dijon mustard
2 tbsp runny honey
1½ tbsp olive oil
1 tbsp fresh orange juice
1 tsp orange zest
1 garlic clove, minced
½ tsp fresh rosemary, chopped
¼ tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
¼ tsp chilli flakes (optional)
Directions
Butterfly chicken so it cooks evenly.
Mix all marinade ingredients in a bowl.
Add chicken and coat well. Marinate 30 mins (or longer if you have time).
Bake at 200°C (400°F) for 20–25 mins.
Optional: grill 2–3 mins for that golden, glossy finish.
Rest 5 mins, spoon over juices, and serve.
Juicy, sticky, sweet, tangy… and so easy.
