Creamy Parmesan One Pot Chicken (CPOP)

Ingredients

• 1½ Ibs. Chicken Breasts, 1-in pieces

• 4 Tbs. Butter

• 1 Lg. Onion, diced

• 3 cloves Garlic, minced

• 2 tsp. Italian Seasoning

• ½ tsp. Pepper

• 1 tsp. Salt

• 2 ½C. Chicken Broth

• 1C. long grain White Rice

• ½C. Heavy Cream

• ½C. grated Parmesan

•2 Tbs. Butter

Directions

1. Melt 1 butter in a large skillet over medium high heat. Add the onion and cook for 2-3 minutes until beginning to soften.

2. Add the diced chicken to the pan along with the Italian Seasoning, pepper & salt.

3. Cook and stir for 5 minutes until chicken is golden on all sides.

4. Add garlic and cook on more minute, stirring constantly.

5. Add chicken broth and rice to the pan and stir.

6. Bring to a boil, then reduce heat to medium low.

7. Cover and simmer for 17-20 minutes until rice is tender.

8. Stir in heavy cream and parmesan.
