Sweet Potato Fajita Bowl Tutorial

Ingredients

Base:

4 small sweet potatoes, diced into cubes

Spray of avocado or olive oil

½ tsp each paprika & garlic powder (optional rosemary)

Salt & pepper

Taco Mince:

500 g lean beef mince

1 packet of taco seasoning

Splash of water

Caramelised Veggies

2 capsicums (I like 1 red + 1 yellow), sliced

1 brown onion, sliced

1 tsp olive oil (or spray)

1 tsp brown sugar L

Splash of water

Pinch of thyme, paprika

Salt & pepper

Guacamole

1 large avocado

Sprinkle of coriander

Squeeze of lemon juice (optional)

¼ tsp garlic powder

Salt & pepper

Extras

80 g shredded mozzarella (-20 g per bowl)

Light sour cream or cottage cheese

Directions

Spray sweet potato with olive oil, and season. Air fry at 200 °C for 18 mins, shaking halfway, cook until golden.

While the potatoes cook, brown the beef mince in a pan, stir through taco seasoning with a splash of water until coated.

Remove and set aside. In the same pan, sauté onion and capsicum with oil or spray, water, brown sugar, and seasonings. Sauté over medium- high heat, stirring constantly until soft and caramelised.

Assemble the bowls: Layer sweet potato, taco mince and veggies in bowls. Top with mozzarella (melt for 30 sec in the microwave), then add guacamole, sour cream and a sprinkle of coriander.
