Cheesy Stuffed Baked Potato

Ingredients

  • Potatoes

  • Olive oil

  • Diced ham (whatever you are stuffing with)

  • Butter

  • Sour cream or Heavy Whipping Cream

  • Salt

  • Pepper

  • Onion Powder

  • Garlic Powder

  • Shredded Cheese (Whatever type you prefer)

  • Bacon bits (Optional)

Directions

  1. Preheat air fryer to 400 F for 4-6 minutes depending on your air fryer.

  2. Place potatoes in the air fryer and brush the tops evenly with olive oil.

  3. Air fry the potato for 30-45 minutes or until soft inside. The time will vary depending on your air fryer.

  4. Take the potatoes out of the air fryer and cut the tops of the potato’s off.

  5. Scoop the inside of the potatoes out into a separate bowl.

  6. Add your Salt, Pepper, Garlic Salt, butter, and Onion powder to the bowl.

  7. Add the sour cream or heaving whipping cream. (I would suggest starting with 1/4 cup and adding little bits at a time and mixing until you get the consistency and texture you desire.

  8. Once you have achieved the desired texture and consistency scoop the mashed potato mixture back into the potato skins.

  9. Sprinkle your desired shredded cheese (typically mozzarella) on the potatoes and place them back into the air fryer at 300 F for 5-10 minutes. (Check on your basket frequently to ensure it doesn’t burn as the temperature will vary based on size of potato and air fryer model. Adjust the temperature if needed.)

  10. Take out of the fryer and enjoy! 😊
