Sweet and Tangy BBQ Sausage Rice

1 lb smoked sausage (beef or turkey), sliced
1 cup long-grain white rice
1 ½ cups chicken broth
½ cup barbecue sauce
2 tbsp honey
1 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp olive oil
½ cup diced bell peppers (red, green, or yellow)
½ cup diced onion
1 tsp garlic powder
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt (adjust to taste)
¼ tsp red pepper flakes (optional, for heat)
2 tbsp chopped green onions (for garnish)
Directions
Cook the sausage
Heat olive oil in a large skillet over medium heat.
Add the sliced sausage and cook until browned on both sides, about 4-5 minutes. Remove and set aside.
Sauté vegetables
In the same skillet, add diced onion and bell peppers. Sauté until softened, about 3 minutes.
Add rice and liquid
Stir in the uncooked rice, allowing it to toast slightly for 1-2 minutes.
Pour in chicken broth, barbecue sauce, honey, soy sauce, Worcestershire sauce, and all seasonings. Mix well.
Simmer
Return the cooked sausage to the skillet and bring the mixture to a light simmer.
Cover and reduce heat to low. Let it cook for about 15-18 minutes, or until the rice is tender and liquid is absorbed.
Fluff and serve
Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
Garnish with chopped green onions and serve warm.
