Chopped Cheese Burger Loaded Fries

Ingredients (makes 2 Bowls):
16oz 96/4 Lean Ground Beef
30g Yellow Mustard
150g White Onion
50g Chicken Bone Broth
3 Slices 2% American Cheese
750g Russet Potatoes
100g Diced Roma Tomatoes
100g Diced Dill Pickles
100g Diced Red Onion
Sesame Seeds
Sea Salt
Garlic Powder
70g Low Cal Big Mac Sauce
Low Cal Big Mac Sauce:
170g Plain Non Fat Greek Yogurt
113g 2% Cottage Cheese
65g Sugar Free Ketchup
25g Dijon Mustard
20g Pickle Juice (from jar)
4g Nutritional Yeast
½ Tsp Paprika
¼ Tsp Sea Salt
¼ Tsp Black Pepper
Directions
Add all your big mac sauce ingredients into a small blender and blend till smooth.
Wash and dry outsides of potatoes. Then cut into crinkle cut fries.
Air fry on 400 degrees F for 20-23 minutes. Shake these fries every 8 minutes to make sure they cook evenly.
While those are cooking, add 150g of diced white onion to a pan preheated on a 7/10 heat. Cook until they start to get a little browning. Add a big pinch of salt and chicken bone broth. This is how we caramelize them without any oil. Take them off pan and set to the side.
Now form your 96/4 lean ground beef into 3 even size balls. Then add to that same pan preheated on 7/10 heat. Then use burger press to flatten your burgers as much as you can. Repeat for all 3 burgers. Top burgers with a pinch of sea salt, garlic powder, 10g yellow mustard and a spoonful of the caramelized onions.
Cook on that side for 3-4 minutes until they get a nice maillard reaction aka a nice crust. Then flip and cook the other side for 2-3 minutes.
Add a cheese slice on top of each patty. Add cover on top of pan to melt cheese. Then chop the ground beef chopped cheese style.
Add fries to a bowl and spray with avocado oil. Then toss in sea salt and garlic powder.
Now build your bowl with fries, chopped cheese, sauce, leftover caramelized onions, tomatoes, red onion, pickles, sesame seeds and enjoy!
