Australian Or Texas Sheet Cake

Ingredients

1 cup (227) salted butter

1 cup water

5 teaspoons cocoa powder

2 eggs

1/2 cup buttermilk

2 cups (240 g) flour

2 cups (400 g) sugar

1/2 teaspoon baking soda

Frosting:

4 cups (450 g) powdered sugar

3/4 cup margarine, melted

2 tablespoons buttermilk or dairy free milk

1 1/2 teaspoons vanilla

1 Tablespoon cocoa powder

Directions

Preheat oven to 350 degrees and grease a large cookie sheet.

In saucepan melt butter, add water and cocoa and bring to a boil. Remove from stove and let cool.

Add 2 eggs lightly beaten and buttermilk and mix.

Combine dry ingredients and add to the above batter and mix.

Pour into the pan and bake 20-25 minutes. Remove from oven and let cool about 20 minutes before frosting the cake.

To make frosting— melt margarine, then add cocoa and buttermilk and bring to a boil. Then remove from the heat and add the vanilla and powdered sugar to desired consistency stirring with spatula and then using hand mixer to beat so there are no lumps. Pour warm frosting onto warm cake.

Notes

This is the recipe grandma B made. Julie says margarine works better in the frosting though I don’t know why.
