Crockpot Salisbury Steak Meatballs in Garlic Herb Mashed Pot

For the Salisbury Steak Meatballs
1 lb frozen homestyle meatballs (or homemade)
1 packet brown gravy mix (1 oz)
1 packet onion soup mix
1 can cream of mushroom soup (10.5 oz)
1 1/2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
Optional: 1 tablespoon cornstarch + 2 tablespoons cold water (to thicken gravy)
For the Garlic Herb Mashed Potatoes
3 lbs potatoes, peeled and cubed
4 tablespoons butter
1/2–1 cup milk or cream
3 cloves garlic, minced
1 teaspoon dried parsley or Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
Directions
Make the Meatballs
Lightly spray your crockpot with nonstick spray.
Add frozen meatballs to the bottom.
In a bowl, whisk together gravy mix, onion soup mix, cream of mushroom soup, beef broth, Worcestershire sauce, garlic powder, onion powder, and pepper.
Pour the mixture over the meatballs.
Cook on LOW for 6 hours or HIGH for 3–4 hours.
If you want thicker gravy, stir in cornstarch slurry during the last 20 minutes.
Make the Garlic Herb Mashed Potatoes
Add potatoes to a large pot of salted water and boil 12–15 minutes, until tender.
Drain and return to the pot. Add butter, milk, garlic, parsley, salt, and pepper.
Mash until creamy, adding more milk if needed.
Serve
Spoon mashed potatoes onto plates and top generously with Salisbury steak meatballs and gravy.
Add extra herbs if you like and serve warm.
